Bake At Home Bibingka Mix

We have a easy to follow recipe for our Bake At Home Bibingka Mix:

Recipe

Ingredients

- 3 Eggs

- 45g milk

- 180g canned coconut milk

- 24g butter (melted)

 

Equipment Needed: mixing bowl, whisk, muffin tray, muffin cases (non stick) or banana leaves

Method

1.     Preheat oven to 190C/ 170C Fan/ gas mark 5

2.    In a mixing bowl, whisk together eggs, milk, coconut milk and melted butter until smooth.

3.    Whisk in the dry ingredients in thirds until batter is combined.

4.    Pour batter even.ly into 6-8 cases

5.    Bake at 180c/160C Fan oven/Gas mark 4 for 45 mins. Bake until golden brown and puffed.

Brush with butter and sprinkle with sugar.
